Eggnog Cookies

Last night we had a Christmas party.  When planning our menu, I turned to my Pinterest page for some inspiration.  One of the cookie recipe that caught my eye featured a  Christmas staple - eggnog - so I decided it was a must!

Ingredients

Cookies
1 1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon nutmeg
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon

Eggnog Glaze
1 1/2 cup powdered sugar
3-4 tablespoons eggnog


Directions

Preheat oven to 300 F.  Combine flour, baking powder, cinnamon and nutmeg.



Cream sugar and butter.



Add eggnog, vanilla, and egg yolks and beat at medium speed until smooth.



Add flour mixture and beat at low speed until just combined.  Don't over-mix!



Make rather small dough balls and place onto cookie sheets (I greased mine...).



Bake 15-18 minutes or until the edges barely start to brown.  While cookies are in the oven, make the eggnog glaze by whisking together the powdered sugar and 4 tablespoons of eggnog.



Glaze your cookies and top with cinnamon!  Let stand until the glaze hardens enough to serve or stack for storage.



They are super soft and carry a big eggnog & nutmeg punch.  Delicious!
