10 Favorite Fall Recipes

Happy October!  I'm so excited it's fall - it's my favorite time of the year.  Yummy food, cool weather, pretty leaves, apple picking...it's mother nature giving us one last hurrah before we buckle down for a rough winter.  I thought it would be fun to put together a collection of some of my favorite fall recipes.  Check 'em out and make one soon!

Mini Pumpkin Pies - so easy, delicious, AND portion controlled!
Baked Apples are one of my favorite fall (let's be real...ANY TIME) sides!  It's a healthy way to sweeten up your dinner!




Our favorite chili is a mixture of my mom's recipe and Trav's mom's family favorite...with a little twist of our own!


This easy apple cake starts with a box mix - gotta love half-way homemade!


Make some orange pepper jack-o-lanterns.  Great for decoration OR to fill with your favorite stuffed pepper recipe!


Everything's good roasted...especially this cinnamon sugar acorn squash!


An easy how-to for buttercream pumpkins.  


Skip the Mott's and make your own homemade applesauce.  When it's done in the crock pot, it's effortless!

Some Fun Things Lately - Apple Picking, Ann's Party, Boston Globes, and Toby's New Friend

September was a crazy busy month for me.  I feel like we only had a handful of nights that we weren't off doing something, which made for a lot of fun...but has left me exhausted and fighting a cold!  I've told you about a lot of the fun things we did already, like visit the largest antique fair in the world and go to Saratoga Springs and Cooperstown, NY, but today thought I'd share a few snippits from other awesome things we did last month!

Ann's birthday was a few weeks ago, and our friend Betsy threw her a beautiful dinner party with a bunch of us girls.  It was SUCH a fun night.  I love hanging out with the husbands there, but there's something special about girl time.  Agreed?  We had a great time eating yummy food and hanging out all evening.  Betsy has a beautiful home and is an entertainer extraordinare.  Check out her beautiful fall appetizer display below - she used a large basket and layered wooden boxes to add height, tossed in some pumpkins, and even included some flowers and a cabbage.  I brought dessert: gluten free cupcakes and homemade nutella ice cream.  Happy birthday, dear friend!



Last week I shared my lasagna recipe that I made for a group of our friends after we went apple picking.  What I didn't share with you were any pictures from the first half of the day!

Honey Pot Hill Orchard is easily our favorite place to go apple picking in the Boston area.  It's about 45 minutes west of Boston and seems to have an endless amount of apple trees, hay rides, hedge mazes, farm animals, pumpkins, and yummy cider donuts.  All the makings of a perfect fall day!






The next day we had dinner with our neighbors, Paul and Ali.  We're so lucky to live next door to some of the coolest people.  Dinner was at their house and featured their homemade pesto that they made from their garden.  Seriously good!

After dinner, Ali got one of their guinea pigs (Bolt) out of the cage and we decided to see if Bolt and Toby would get along.  I was terrified Toby would think he was a toy, so we took things slowly.  Toby wasn't sure what Bolt was at first...he rarely sees animals smaller than him (besides squirrels)!  After checking him out from afar (picture number 1), Toby walked across the table and lightly "booped" Bolt on the top of the head.  Then Bolt licked Toby's face and they rubbed faces.  Success!!





We've played (and won) a lot of trivia lately.  Last week our team name was "The Intellectual Q-Tips"  to go with our head gear for the evening.  Poor Ann had to wear a head wrap to cover a 3 day electrode test, so Barb and I wrapped our heads in solidarity.  Laugh if they want....we won.  :)


The final random fun thing I wanted to share is one of the cool art installations happening in Boston right now.  There are 26 globes lining the Tremont Street edge of Boston Common that are part of the "Cool Globes: Hot Ideas for a Cooler Planet" show that travels the world.  Each globe was designed by a different artist and covers a different green strategy or environment issue.

Baked Apples

One of my favorite things to see cooking when I was growing up were baked apples.  Contrary to their name, they're not actually baked - they're cooked in a frying pan!  When I was little I would sneak into the kitchen while these were cooking and steal the apples with the most brown sugar on them.  In all honestly, that's half the fun of making these - the snacking.


Ingredients
5 large apples (I used gala)
3 Tablespoons brown sugar
1 teaspoon cinnamon

Directions
Peel, core, and slice apples.  Add apples, brown sugar, and cinnamon to a large pan and stir until apples are coated.

Cook on medium for 15 or so minutes, stirring every few minutes, until apples are cooked through.



They're seriously good.  I especially like them served with pork.  Mmmmm...

Cake Decorating How-to: Buttercream Pumpkins

This weekend I volunteered to bring cupcakes for a New Music Brandeis concert reception.  Since the concert was the weekend before Halloween, the performers decided they'd all dress up in costumes for the performance.  It was one of the most eclectic concerts (musically) I've ever been to, and the costume-clad musicians made it even more fun.  I decided to decorate the cupcakes with butter cream pumpkins, and they came out very cute (and actually really easy to do)!  Here's a little "how-to" so you can impress your friends and family.


When you're making "stand-up" butter cream decorations, the thickness of your icing is important.  I usually use tweaked version of Wilton's buttercream recipe.


Wilton's Buttercream Recipe                        My Tweaks to Wilton's Buttercream
1 cup solid white vegetable shortening                      1/2 cup vegetable shortening
1 teaspoon Wilton Flavor                                           1/2 cup salted butter
2 Tablespoons milk or water                                     1 teaspoon Wilton Vanilla
1 pound pure cane confectioners' sugar                     2 Tablespoons water
1 Tablespoon Wilton Meringue Powder                     4 cups pure cane confectioners' sugar
A pinch of salt (optional)                                           1 Tablespoon Wilton Meringue Powder

A few notes: When you're going to be coloring your icing, make sure you use the Wilton (colorless) Vanilla (you can buy this from Michael's or AC Moore) so that it doesn't make your oranges and greens "muddy".  Also, in the pictures below I doubled the recipe.  This recipe makes the "thick" icing version.  To thin your icing (make it more spreadable), add water slowly until it reaches the desired consistency.   If you thin too much, add more powdered sugar.

Directions

Combine and cream wet ingredients (butter, shortening, vanilla and water).
Add powdered sugar 2 cups at a time, mixing well in-between.  Add meringue powder and mix til smooth.


Ice the tops of your cupcakes with a thin layer of the white icing.  Transfer some of the icing from your mixing bowl into a smaller bowl and add a little water, mixing between every few drops, until the icing becomes an easily spreadable consistency.


Now for the fun part!  Pumpkin time...

I found it's helpful to practice designs when you're learning to decorate cakes - instead of messing up a dozen cupcakes with the trial and error approach.  Tape two paper towels down on a flat surface.  Then tape two pieces of wax paper (on top of each other) on top of the paper towel.  Set aside some of your icing as "practice icing" so you can practice the shapes you're making and re-use the same icing until you get it right.  (Then toss the practice icing...just in case!)


Transfer more of the icing from your mixing bowl and add a few drops of orange gel coloring (you can buy this at Michael's or AC Moore).  The gel coloring is important because regular (liquid) food coloring will change the consistency of the icing.  The gel doesn't!














The pumpkin body is made using a size 12 tip.  You'll also need a piping bag (you can buy disposable bags at craft stores) and a coupler (here's some information about how to use a coupler).

First make a ball of icing.  To apply, point your tip straight down just above the surface.  With consistent pressure, start piping icing and raising your tip slowly as the ball forms.  Keeping the tip lower to the surface will let the ball increase its diameter.

Next, you're going to make ridges up the sides of your ball.  Start piping at the bottom, slowly lessening pressure as you reach the top.  The top will be a little messy where all your ridges come together.  Don't worry!  It's not a big of a deal since there will be leaves/vines covering most of the top.

Next, practice your leaves.  Mix some green icing (you wont' need too much).  I used the Wilton "Leaf Green" gel.













Use a medium leaf tip to make the leaves.  You'll need to hold the tip so the "V" is perpendicular to the surface.  Use your practice area to play with the different leaf types.  Use more pressure when beginning the leaf and as you move away, lessen the pressure.






Once you feel comfortable with your pumpkin and leaf skills, put them all together on your cupcakes!


I used another tip (a tiny hole - either tip 2 or 3) to make little vines around the top.  Cute little curls are never a bad thing, and add a lot to these little pumpkins!

Now go impress your friends!
