Edible Arrangement How-To

Tuesday, we went to an Election party at our friends Peter and Allyn's house.  I wanted to bring some fruit to snack on through the evening, but didn't want to just bring a bowl of it, so I decided to try my hand at a homemade Edible Arrangement!  I figured if it worked, it would be a fun way for everyone to enjoy their fruit, and if it didn't work, I'd just un-skewer it all and everyone could enjoy it in a bowl.  :)

Thankfully, it turned out well!

For my arrangement, I decided to use strawberries, blueberries, pineapple, grapes, cantaloupe, and marshmallows.

I put together a few tips to pass along to you, so you can make your own!  Here's what I did.

I ended up buying WAY too much fruit (since I had no idea how much I'd need for a full arrangement).  Turns out I only used one package of strawberries, one pineapple, one cantaloupe and a few bundles of the grapes.  I did use all the blueberries and most of the large marshmallows.

I wanted the pineapple to have a pleasing shape (instead of just chunks), so I cut it into rings, cut the outside off, and then used a round cookie cutter to cut circles out.

Tip:  Cookie cutters with jagged edges don't work well with the grains of the pineapple, so pick a shape that is mostly rounded, like a flower or circle.

Prepare the rest of your fruit (cut and/or wash as appropriate) and give each item its own bowl.

Now prepare your vase!  You can either use styrofoam or some of the green floral foam.  I stopped by the flower department at our grocery store and got two bars of the floral foam for about $3.  Cut the foam so it fits snugly in the vase, and you're ready!

Tip:  Push the foam down so it's about 1" below the top of the vase, so it's not visible in your arrangement.

Now for the fun part - skewering your fruit!  Put one piece of fruit on the top of the skewer.  Then start sliding fruit from the bottom to the top to fill the stick.  Make lots of different combinations as you go so your arrangement doesn't look the same all over.

Tip:  If you're using marshmallows, slide a piece of fruit on before you try to put a marshmallow on.  This will "wet" the stick enough so the marshmallow doesn't leave stickiness all over the skewer.

The skewers toward the center will need to have more fruit on them since they'll be taller.  Make some that have less fruit as you fill the arrangement in so you can stick the skewer further into the foam and round the arrangement out.  Don't push the skewer into the foam so far that the fruit is touching the foam - the bottom piece will be tainted!  (ewww)

Tip:  It's easier to stick the skewer in the foam if you take the top piece off the skewer and push from the top.  Once the skewer is in the arrangement, return the piece to the top.

Toward the end I made several half sticks and filled in the center so the arrangement was fuller throughout

Just keep adding skewers until it's perfect!

It's also lot of fun eating the fruit off of a stick.

I'm thinking of making one for Christmas that has strawberries and marshmallows to look like a candy cane.  There are so many fun themes you can do!

Aerosmith in Boston

Monday morning, as I was driving to work, I came across a large number of police and news vans in front of the first apartment husband and I lived in when we moved to Boston 6 years ago.  I didn't see an accident and there was no crime scene tape, so I didn't think anything bad had happened.  I also knew it couldn't possibly be a movie filming, because there's an endless number of streets that would be nicer for a film crew to pick, so I called Travis and had him Google what was going on!  Through the magic of the internet, we learned that Aerosmith was doing a covert concert there at noon!

Sorry about the crappy cell phone pictures - I would have brought our real camera if I'd known (and they hadn't been so sneaky about the whole thing)!  You get the idea tho...right?

Since I work about a mile from Commonwealth Ave (where the concert was), I HAD to go, so I trekked down the street at quarter til 12 and waited with Every. Other. Person. In. Allston.  There were SO many people there.  They'd shut down Comm Ave (that's a big deal), the T (subway) and all of the side roads in the area.  People filled both lanes of the street and the access roads as far as you could see.

Just after noon, the Duck Boats came rolling by carrying the Mayor and his crew, the owners of the Celtics & their posse, Tom Brady...and finally Aerosmith!

Turns out, Aerosmith lived in the apartment they performed in front of in the early 70's and wrote most of the songs for the first two albums there.  They practiced in the basement and recorded their first album in that building!  After the concert, they put a plaque on the building, and there was rumor they did a "walk of fame" type thing on the sidewalk in front of the building too.  I'll have to take a stroll down there another day to check those out.

I couldn't stay for too long, since I had to get back to work, but it was such a cool thing to be able to see such an iconic band!  Who would have thought our first apartment was so close to theirs!

As I walked back to the office, with Sweeeeeeeeeeeet Emooooootionnnnnnn blaring through the city, I decided this was definitely the coolest lunch break ever.  :)

3 Ingredient Pot Roast

One of my "back-pocket" recipes is a three ingredient roast.  If three ingredients aren't easy enough...it's also made in the crock pot!

Ingredients

Beef or Pork Roast
1-1.5 20 ounce bottles Pepsi
2-3 bottles BBQ Sauce

Directions

For this recipe, you can either use a pork or beef roast.  Hubby's favorite is the beef, so that's what we usually end up going with.

Put your meat in the crock pot.  Pour 2 bottles of BBQ sauce over meat.  Pour in one 20 ounce bottles of Pepsi and stir.

Depending on how large the beef/pork you're using is, you might wish to add more BBQ sauce and Pepsi.  Just make sure to add these in a 2:1 ratio!

Cook 8-10 hours on low or 4-5 hours on high (or until done).

Slice and serve!  I like to fill a gravy boat with the sauce for you to pour over your meet while eating.  SO good!

Do you have any favorite recipes that only use a few ingredients?

Obama Rally

This morning, Travis and I woke up briiiiight and early (4 am) and headed north.  What, might you ask, possessed us to get up so crazy early in the morning?  Saturday night, we realized that not one...but TWO Presidents were going to be in New Hampshire Sunday morning!  I've never seen a President before, so we were really excited to go!

Thankfully, the rally fell on Daylight Savings weekend, so we were still able to get 6.5 hours of sleep.

The rally was in Concord, NH.  "Doors" opened at 7am, and Presidents Clinton and Obama were set to go on around 10.  Our tickets directed us to a park & ride situation the volunteers had set up a few miles from the center of town.  We got there and waited in our first (of many) lines of the day.  It was 40 degrees and  barely light outside, but we were excited!

We were so naive.  We got on the school bus...feeling good about where we would stand in line to see the Pres's.  Oh...how wrong we were!  When the bus drove into downtown (at about 6:30am), there was already a line of people a half a mile long.  So...we hopped on the end and waited some more!

We finally  made it to security and into the podium area...where again...we waited for things to begin.  Thankfully Ann, Terence and husband are awesome, so it was a lot of fun!

As we stood there, waiting for the rally to begin, we realized we were NOT alone!  We'd seen a lot of secret service members on the way in, but as time went on, we spotted several on the rooftops around us.  I'm sure there were many more that were hidden...such a crazy thing to be surrounded by!

Those aren't guitars on their backs...

Thanks for keeping us safe while we were there, police/secret service (wo)men!

After some singing from a Dartmouth a cappella group and several speeches from local governing figures, out came the Presidents!

Dartmouth group

Obama!

There were SO many people at the rally (when we came home, we read online that over 14,000 people showed up).  I was so impressed how nicely everyone was getting along!  After 6 hours of lines/waiting scrunched together, I didn't see or hear one angry thing.  Everyone was just REALLY happy to be there - such a fun day!  It was also really nice to hear a speech without it fading into someone's ridiculous political commentary for a change.  :)

After the rally, we knew the lines to get back on the buses would be insanely long, so we found a (crappy) place to eat lunch first.  Then we waited in yet another long line to get back to our car.

We landed back home around 3:30pm.  Travis and I ended the day by watching the new(ish) movie, The Campaign, which was really funny.  Overall...it was a (really) long, fun, and inspiring day!

Honey Mustard and Apple Pork Tenderloin

One of my favorite things ever is a pork loin cooking away in the oven.  Last night, Travis and I got creative in the kitchen and put together a delicious Honey Mustard and Apple Marinade for a pork loin.  Oh. My. Gosh...it was good.  The best part is that it takes almost no time to put together - just mix and bake.  Check it out.

Ingredients
2 pork tenderloins
Honey Mustard & Apple Marinade (recipe below)
2-3 large apples

Honey Mustard & Apple Marinade
1 8oz jar Grey Poupon Country Dijon Mustard
1 cup chopped onion
1/2 cup water
1/2 cup applesauce
1/4 cup brown sugar
4 Tablespoons honey
1/2 teaspoon mustard powder
1/2 teaspoon cinnamon
1 teaspoon salt
pepper

Directions

Mix Marinade ingredients in a medium bowl.

Pour marinade into a large gallon size Ziploc bag (no clean-up this way!) and marinate (in your refrigerator) 1-3 hours.

Once you're ready to cook, pour tenderloins and marinade into a large Pyrex dish.

Peel, core and slice apples and top tenderloin.

Bake at 350 for 60 to 75 minutes (or until done).

Slice tenderloin and serve.  Top with apples and marinade!  M-m-mmmm.

Our friend Jess came over for dinner so her pup Paris can get used to our apartment, since we'll be dog sitting for a week.  Paris is such a sweet girl - it's going to be a fun week!
